Lodema and I have made One Pan Mexican Quinoa several times at the Saturday soup kitchen. We have been surprised how well it has been received.
We have changed the recipe to make it easier and even tastier. Here’s our current recipe.
One Pan Mexican Quinoa – SEPT. 26, 2022 VERSION
Vegan - No oil, or sugar and low salt
2 tablespoons of garlic minced (add more or less for your taste).
One medium onion diced
1 cup quinoa
2 cups of vegetable broth (low salt) or water
1 (15 oz.) can black bean, drained and rinsed (no salt or low salt)
1.5 cups salsa – your favorite, low salt if possible. You choose the heat level.
1.5 cup corns kernels or 1 can drained.
1 tsp. chili powder
½-1 tsp. ground cumin
Sauté the onion and garlic on medium high heat for about 1 minute or more.
Stir in all the other ingredients. Bring to a boil, cover, reduce heat and simmer until the quinoa is cooked, about 20 minutes. (Instant pot - high pressure 5 minute).

Options and comments:
- Use any bean. Rinse those with dark colored liquid, but not those with clear liquid like garbanzo beans or navy beans.
- Use creamed corn instead of kernels, but don’t drain and rinse.
- Add any other vegetable you would like. We had canned green beans so we also added a can drained in a double batch.
- If you want it soupier, add more water.
- Use any grain to replace the quinoa. Adjust cooking times if needed.
- We have toyed with the idea of cooking the grain separately and then adding everything together while heating on the stove.
- Add a chopped jalapeno pepper with the onions and garlic or any other pepper and saute’ .
